What are tomatillos anyway?

Tomatillos are a small, round, slightly tart fruit that resemble little green tomatoes.  Don’t confuse them with American green tomatoes though, which are unripe tomatoes.

They can be eaten raw or cooked and are commonly found in salsa verde (green salsa).  They are a popular staple food in Mexico.

Tomatillos grow with a husk over the fruit, protecting it, which is thin and papery.  It’s easily removable but it’s got a frustrating sticky film over the skin of the fruit beneath it.  By the way, never get into prepping early mode wiht tomatillos.  Tomatillos should never be de-husked in advance, always keep the husk on until you’re ready to use it.

So how do you peel tomatillos?

The secret to smooth, non-sticky tomatillos is hot water.  Simply drop the fruit, husk and all, into boiling water for 10 seconds  and remove.

You can then peel tomatillos easily by pulling off the papery outer covering and discard.  The sticky film disappears in the hot water so all you are left with is a perfectly smooth, peeled tomatillo.
