If there’s ever an appetizer that will be gobbled up it’s anything encased in puff pastry. When you add brie to the mix, well, in my family…it’s a home run. These sweet little two-bite Puff Pastry Brie Bites are both incredibly easy and delicious, you won’t come home with any leftovers.

My family got together for a cookout this weekend and I was a,thrilled to be assigned appetizers.  (Yay, my favorite thing to make is appetizers!)

My sister and my husband are both huge brie fans and I just happened to be at Aldi’s (limited selection grocery store with pretty much the best prices on produce and well, everything they sell).  I knew I had some Pepperidge Farm Puff Pastry Cups in the freezer so planning… done.  Puff Pastry Brie Bites it was.

These little puff pastry cups went on clearance at my local Food Lion a couple months ago.  Food Lion, by the way, has the best close-out sales when they want to move something out.  I always shop there with an eye out for those magic blue stickers of theirs.  I think I paid a dollar a box for the puff pastry cups and I bought as many as I could store in my freezer that day.  This was the last of the magic boxes, alas.

I’d pay full price for these little puff pastry cups though, they’re that versatile.  Inside the box are strips with a total of 24 little puff pastry discs.  You snap them apart (frozen works better than thawed!!!) and lay across your cookie sheet.

Bake for 20 minutes and then remove to counter and take a wooden spoon to poke the center down.  Then add the filling of your choice, rebake if needed and voila!

I looked through my refrigerator to see what I had readily available and briefly considered making a savory puff pastry brie with caramelized onions (leftover from the BBQ Pork Quesadillas I made last week).  But upon noticing I had both apricot and blackberry jams in the fridge I decided to go the sweet rather than savory route.

I poked through the Rubbermaid container I keep in the freezer containing any nuts I’ve purchased and right on top was a bag of pecan chips.  Ding, ding, ding!  I had a yummy appetizer that pretty much used ingredients I had on hand already.  I love it when that happens.

While waiting for the puff pastry discs to cook, I prepped my brie.

I cut the round of brie into 8 sections and then cut each section into 3 wedges and then trimmed them again into thirds.  This allowed me to stuff them into the tiny puff pastry cups.

Once the discs were cooked I poked down the centers and filled each one with brie.  It seemed like too much brie while stuffing them but it was actually just the right amount once cooked.

I topped half with blackberry jam and half with apricot jam.  Sprinkled all 24 puff pastry brie bites with pecan chips (you could toast the pecan chips first, if you choose) and moved them over to an oven-safe serving platter.

We drove to my brother’s house and once there I popped them in the oven for just 5 minutes and served them piping hot on the same platter.  They were gone in minutes!
